Elenore Bendel Zahnis a health coach, organic gardener, writer, photographer, and the founder ofEarthsprout, one of our favorite resources for seasonal vegan recipes. "All I create is brought to life with the intention of shaking things up and create a better world. And it’s all very delicious in so many ways."

These days, few things make me as happy as when I know that my child is well-fed. I suppose the most profound thing a mother could wish for is just that. Stillburlap pillow cover diy, the feeling in my heart when Caspian happily chews on a piece of broccoli (not without a yummy olive oil dressing though..) or seeing his hulk-hued face after eating a green smoothie makes me feel like SUCH a mom. Seriously, I could jump up and down with joy if he 'Om-Noms' his way through meals instead of very clearly showing how he’d much rather run around the garden like the 19 month young wildling he is.

I spent a lot of time by my blender while pregnant with Caspian true to the inner smoothie nerd as I am. It was also the easiest way to whip up lots of nutritious, delicious and versatile snacks to feed my ever-hungry body. While standing there right next to the loud motor of my Vitamix, I’d hold a hand on my belly, hoping the babe inside wasn’t already rethinking his choice of (a very noisy) place to be born. Spending my days with Caspian now means a lot of time in the kitchen too and I love how he takes turns creating delicious things with me and spending time in that obviously super rad fantasy-world of his. The hilarious thing now is that if there’s one thing that makes him turn in his step, wherever in the house or garden he is - it's when I turn on the blender. ‘Mor, Moonie!’ (Mum, Smoothie!) he yells happily and stretches up his little arms for me to pick him up.

Summer has begun and with it comes a longing for cooler treats which is why I have decided to share three of our favorite smoothies with you today. These are easy to whip up with any kids in your life (or by yourself for that matter). God knows that snacks (and breakfasts!) often need to be brought to life in as little time as possible all while showing off an awesome nutritional load at the same time. So let smoothies be your go-to and why not engage your babe!? Caspian loves preparing the ingredients with me while sitting on the kitchen counter and then throwing the fruits and veggies into the blender. And guess who the first taster is?

Proud little creators of smoothies often make for happy eaters of smoothies which in turn make for calm parents and that right there, my friends, is the start of a better world (for real). Happy Summer!
